The scheme shall include full details of any extract ventilation and fume extraction systems and equipment, the position, appearance and details of ventilation, fume or flue outlets, the type of filtration or fume treatment to be used and details of the manufacturer's operating and maintenance instructions. The fume extraction and ventilation system shall be operated and maintained in accordance with the manufacturer's recommendations, including those regarding the frequency of replacement of any filters, at all times that cooking is taking place or the premises are open. |
